I'm An Athlete, How Should I Eat?

I know BJJ people ask me from time to time the best way to eat for an athlete, how to be strong, lose weight, have endurance. Do I just cut our carbs? Do I just eat less? Are we supposed to be vegan, vegetarian, carnivore, omnivore, herbivore, or Paleo?  It's actually a question about how are you supposed to eat as a human being.
